Shellfish processing including crabs, mussels and whelks
![]() |
The successful processing of shellfish meat is dependant upon the quality of the initial cooking process, both in the ability to reach the desired cook temperature rapidly, and to maintain a controlled and stable product temperature throughout the product load. The two main processes are continuous atmospheric and semi-continuous pressure. |

The semi-continuous pressure cooker is a very controllable and compact high capacity unit, designed separately for processing mussels and whelks. This continuous atmospheric cooking unit can be tailored to suit your exact loading requirements indeed units are often built to process with more than one product. Fuelled with oil, gas or live steam injection the Polar atmospheric unit offers outstanding versatility coupled with low running costs. |
Crab processing

The Polar range of crab processing equipment has been continually developed since 1988 when the first continuous crab cooking unit was built. Since that time our range of equipment for the industry has grown to include continuous killing, cooking, washing and leg/claw blowing systems. |
Mussel processing

From the bulk sack to the final washed product the Polar mussel processing system offers the customer a full compliment of tried and tested shellfish equipment. As with all Polar processing equipment a robust hygienic design comes as standard. |
Whelk processing

The 4,000 kg per hour double head crushing unit would be supplied complete with an integral high pressure pump and shell/meat discharge vibrator. |
![]() |
Designed and constructed to BS 5500 Category 1. The single vessel shown would process approximately 1,800 kg per hour based upon a nominal 5 minute cycle. |
![]() |
Meat leaving the separating unit would pass through the cleaning unit and be subjected to both a light abrasive action and high pressure water sprays. |

Situated prior to the final inspection belt the fines removal & sizing vibrator would eliminate the requirement to hand pick smaller than product debris. |
