The successful processing of shellfish meat is dependant upon the quality of the initial cooking process, both in the ability to reach the desired cook temperature rapidly, and to maintain a controlled and stable product temperature throughout the product load. The two main processes are continuous atmospheric and semi-continuous pressure.


The semi-continuous pressure cooker is a very controllable and compact high capacity unit, designed separately for processing mussels and whelks. Whilst this unit is very effective it must be borne in mind that steam generating plant would also be required.

The continuous atmospheric cooking unit featured above can be tailored to suit your exact loading requirements indeed units are often built to process with more than one product. Fuelled with oil, gas or live steam injection the Polar atmospheric unit offers outstanding versatility coupled with low running costs.
